  6. Get 6-8 fillets Anchovy *finely chopped
  7. Take Freshly Cracked Pepper OR Shichimi (Japanese Chilli Spice Mix)

So, I was shooting the video for preparation of the squid, but I failed miserably. Although I've prepared squid countless times, this time I accidentally broke the digestive gland when. Place a large frying pan on high heat. Then add minced garlic to the oil.

Steps to make Stir-fried Squid with Garlic & Anchovy:
  1. Cut each Squid Tube in half lengthways. Using a sharp knife, score diagonally to make diamond pattern. Cut into small pieces.
  2. Place Squid in a bowl, add Sake (Rice Wine), Garlic & a pinch of Salt and massage, then set aside for 10 minutes.
  3. Heat Oil in a frying pan over a high heat. Stir-fry Squid pieces until almost cooked, then add Anchovy and cook 1 to 2 minutes.
  4. Sprinkle freshly cracked Pepper OR ‘Shichimi’ and enjoy.
  5. Another yummy topping is chopped Spring Onion and some Soy Sauce drizzled over. Yummy!

Once the garlic starts to sizzle in the oil, add the marinade in. Heat a wok over high heat and add the vegetable oil. Add the ginger and spring onions and toss for about a minute until fragrant. Add the squid and toss quickly. Add the Shaoxing wine, soy sauce, salt and sugar and toss to combine.
