One of my many fond memories of living in Japan is the Okonomiyaki Party. The host would supply the staples and the friends brought the beer, along with any special ingredients they wanted to include-because that's the beauty of okonomiyaki, basically you can put whatever you want in it-and the party was on. I decided to throw together some REAL okonomiyaki for dinner. And by real, I mean okonomiyaki without huge thick chunks of cabbage, massive globs of dough and very little else.

- Finely chop the carrots and add the the vegetables to a bowl or pan

- Stir in soy, flour, prawns and calamari (or ham).
- The consistency should be similar to a pancake batter. If too thin add more flour and stir. Ensure there is enough cabbage!
- In a hot pan add oil and add the batter. Turn down to a medium heat so the center cooks and the outside becomes crisp. Flip and cook on the other side.
- Using a plane grate the katsuobushi (or use flaked bonito)
- Flip on to a plate and top with okonomiyaki sauce, mayonnaise and katsubushi flakes. Many attempts!
I found a good recipe online and tweaked it to my liking. Okonomiyaki are traditionally served with a Japanese sauce of the same name and mayonnaise, then sprinkled with bonito flakes or nori. To make a suitable (although possibly sacrilegious) substitute for this sauce, combine three parts ketchup to one part Worcestershire sauce with a dash of soy.
