  3. Take 3 tablespoons Chilly powder
  4. Prepare pinch Turmeric powder a
  5. Take 1 teaspoon pepper powdered
  6. Make ready 1 teaspoon Ginger garlic paste
  7. Prepare to taste salt
  8. Make ready or 2 teaspoon water a
  9. Prepare Oil (we love our coconut oil) enough for shallow frying
  10. Get sprig curry leaves of A (optional)

I always stay away from the ready made fish fry masala powders. Sardines in malayalam it is called Mathi and chala, different places kerala has different names for Sardines. This Sardine Fry gets special taste from the button onions. This mathi fry is a definitely a very good recipe and can make the lunch a special one.

Instructions to make Sardine (Mathi) Fry:
  1. Mix all the masala ingredients into a paste. Check for salt.
  2. Apply the masala paste on to the sardines, making sure that it is coated well, in between the slits, etc. Let it marinate for 15 minutes.
  3. Shallow fry in oil. putting curry leaves in the oil while frying gives a little twist to the aroma and taste.

Enjoy the Chala Fry with Rice Porridge or with rice and fish curry.
