- Melt the marg then stir in enough flour to make a thick roux (paste).
- Turn the heat down and gradually stir turkey stock into the flour roux. If it starts to look lumpy, use a balloon whisk to whisk the lumps out. Keep adding the stock until the sauce starts to thin. Add the dried parsley.
- Turn the heat up on your hob and whisk continuously until it starts to thicken and bubble. Allow it to cook out on a gentle boil for a few minutes then turn the heat down to a simmer.
- Taste the sauce here and season with salt and pepper. Stir in your turkey meat, cooked peas and sweetcorn. Allow to simmer for another 5 mins until piping hot.
- Nice served with rice, pasta or boiled potatoes.
Velouté is considered one of the five 'mother sauces' that almost all of the classic French. In a slow simmer, reduce the velouté by a quarter; warm the cream and add it to the sauce. Chicken veloute is the most common, but there is also fish, veal and beef veloute. For a darker sauce, use chicken stock. For a lighter-colored sauce use broth.
