In a stainless steel saucepan, heat oil and sauté ginger, garlic, onion and tomatoes. As the onions and tomatoes wilt, add the squid mixed with Mama Sita's Coconut Floral Sap Vinegar, and sugar. Add Mama Sita's Oyster Sauce, water with squid ink and squid mixture.

Instructions to make Adobo squid:
  1. Marinate squid using soy sauce and vinegar
  2. Sauté onion garlic and bellpepper
  3. Put the marinated squid
  4. Add the ground pepper brown sugar and chilli powder
  5. Let it simmer until the marinated sauce thicken
  6. Serve and enjoy 🍻

Just like the usual adobo, squid is braised in the mixture of soy sauce and vinegar. It is advisable that you obtain the freshest squids available as it is best to cook this dish when squids are fresh, and preferably the smaller ones because they are packed with more flavors.
